Corporate Executive Chef

Sets the culinary vision for HandCut Foods

Summary:

The Corporate Executive Chef is responsible for setting the culinary vision for HandCut Foods and ensuring that culinary and pastry teams companywide have the training and tools they need to execute on the vision. They lead R&D, oversee culinary operations, and implement standards across units. The Corporate Executive Chef is responsible for supervising all kitchen functions including food purchasing, recipe development and costing, maintaining quality standards, sanitation, and cleanliness at our BaseCamp Kitchen (the commissary).



Essential functions include, but are not limited to, the following:

    Research and development

    • Lead development and innovations of products/recipes across core audiences including but not limited to K-12 dining, university dining, business dining, catering, and wholesale
    • Lead development and innovations of seasonal promotions
    • Oversee menu planning and execution for units served out of commissary kitchen; provide menu planning and execution guidance for units with on-site programs
    • Adapt menus for specific account needs and/or feedback
    • Identify and implement opportunities to improve upon services and processes while staying in line with HandCut Foods’ philosophy and approach


    Safety and sanitation

    • Oversee HACCP procedures to ensure proper sanitation and safety in the kitchen
    • Design and implement training on food safety, food handling, and accident prevention companywide
    • Oversee the maintenance and repair of equipment as needed


    Personnel management

    • Oversee commissary management and staff during daily production for school accounts, wholesale, corporate dining, and catering
    • Oversee staffing plans to meet labor budget


    Procurement

    • Assist with management of vendor relationships, order guides, and product specs; maintain product quality while diligently finding best pricing
    • Oversee procurement to meet food cost budget


    Communication

    • Be “face” of culinary team during high-visibility presentations and demos
    • Collaborate with business leaders to meet company-wide goals
    • Collaborate with sales team on proposals for new ventures
    • Demonstrate clear and respectful written and verbal communication skill
